Description of talkers

They are the most numerous genus of mushrooms with hats. Belonged to the ordinary family, there are approximately 250 varieties. More than 60 species have mastered Russia. The most beloved places for them were forests in the temperate zone, Primorye and Siberia. Govorushka (mushroom) has a soft white flesh with a pronounced sweet-spicy taste. And the name was due to the unusual shape of the hat, which looks a lot like a loudspeaker.

It is interesting to consider the fact that the smell quite accurately characterizes the age of the talker and its culinary quality. Young specimens with a floral or fruity aroma are collected; hats are used mainly because the legs, frankly, are not very tasty.

Edible species

There are not so many eatable talkers. Among them, the edible mushroom is represented by a maximum of one and a half dozen varieties. Slightly more conditionally edible, and most relate to low edible or even poisonous.

  1. Smoky govorushka is considered especially good for eating. It goes to many dishes, suitable not only for drying and salting. Grieves her respectfulness: in the process of processing it decreases in volume by 4-5 times.

  2. Often there is a claw-footed talker. The mushroom is quite tasteless, but well-fed and easily determined by the shape of the base.

  3. The funnel mushroom is most respected by mushroom pickers. Her pulp is freshish, but for the almond smell she is forgiven. The hat has the most pronounced horn-like shape.

  4. Anise talker is attractive with a strong matching smell. It is simply impossible to confuse it with poisonous relatives: they do not emit such a smell. If this aroma doesn’t bother you, you can safely pick up the mushrooms that have it - don’t be poisoned. It is fragrant like an aniseed talker, only the hat has a yellowish.

  5. The goblet-shaped talker resembles a funnel in taste, although its shape is consistent with the descriptive name. Salted, dried, pickled, cooked.

  6. Winter talker is named for the ripening period - it must be collected very late in the fall. It grows in the Far East and the Caucasus, in Siberia and Western Europe, even in North Africa and South America. Especially recommended for soups and a variety of main dishes.

We will dwell separately on the giant talker. Strictly speaking, it is ranked as a pig, but the name has just that. A very large mushroom with a hat up to a third of a meter in diameter. The pulp is somewhat tasteless, in addition, in people with a weak stomach, it often causes its upset. Only young specimens are ingested - at an age, the fungus is bitter and becomes tough. However, it contains an antibiotic that copes with Koch's wand.

Poisonous species

For that, fans of the “silent hunt” do not like talker mushrooms - edible and inedible specimens for the most part are difficult to distinguish. At the same time, some of its species can not only weaken the stomach, but also lead to death. Especially dangerous are such varieties:

  1. The talker is whitish. It grows in the same places as edible relatives, and successfully disguises itself as them. However, when soaking an insidious fungus, the muscarine contained in it acquires a more aggressive form and “infects” non-toxic neighbors. Within half an hour, inverting vomiting appears, the consciousness “floats”, the head is spinning, the stomach experiences intolerable pains. If urgent measures are not taken, death overtakes within an hour. In order not to bring the killer home with them, mushroom pickers immediately examine the leg, which the cut clover (mushroom) has. If a bitter “milk” comes out on the cut, the mushroom is harmless. In a poisonous section, it remains dry.

  2. The talker pale-painted in his youth “pretends” to be winter and may well be confused with her. The consequences of its use are less tragic, but it will be necessary to spend a week or two in the hospital.

  3. Waxed talker is misleading with a pleasant smell and taste. Looks very much like a hangman. However, this talker (mushroom) is deadly. Symptoms of poisoning are similar to those given by Patuyara fiberglass.

  4. The talker lucid attracts with a pleasant spicy smell and dense fleshy flesh. However, her poisoning is very severe.

We have listed only the most common and dangerous poisonous mushrooms. However, in reality there are much more of them, and even experienced mushroom pickers often confuse them.

Cooking talkers

When govorushki mushrooms are available, recipes for the most part require their boiling. This is done as follows.

  1. Extraction is cleared of forest deposits and carefully washed with cold water.

  2. Mushrooms are transferred to salted water (one spoon per liter).

  3. We are waiting for boiling and detect for half an hour.

After that, you can fry govorushki, stew with vegetables or make cakes.
